It is both interesting and fun to learn some international cooking – this time with Persian Potato and Mint Soup. It’s quite easy and fast to prepare this and so here goes;

Ingredients:

1          onion, chopped

4          cloves garlic minced

1          table spoon dried mint

2          potatoes, peeled & cut in cubes

1          cup Cream

Vegetable oil (I am using Flaxseed oil)

Salt & pepper to taste

Preparation:

In a soup pot, sauté onion and garlic with 3 tablespoon of oil, stirring until lightly brown in color. Add the dried mint and stir to mix.

Add 3 cups of hot water and potatoes with salt and pepper to taste. Cover and bring to boil, then simmer on low fire for 30 minutes or until the potatoes are tender. Slightly mash some of the potatoes.

Add cream and adjust for seasoning then heat through. Serve hot garnished with grated sharp cheddar cheese.
